Ingredients:
2 eggs
1 cup sugar
1/2 cup vegetable oil
1 cup all-purpose flour, sifted
1/4 tsp. salt
1/2 tsp. soda
3/4 tsp. cinnamon
1/2 cup nuts, chopped
2 cups frozen Iowa Choice Harvest apples, chopped (16 oz.)

Directions: Preheat oven to 350 or 325 degrees, depending on your pan size (see below). Take your frozen Iowa apples from the freezer and pour in a large bowl to begin thawing. Next, take another large mixing bowl and whisk your two eggs together. Then add sugar to the eggs and beat until thickened. Follow that by adding the oil and mixing well. In a separate bowl sift together the flour, soda, salt and cinnamon. Then add to the batter and mix well. Finally, chop your apples and nuts and then stir them in the batter.

If you want a tall cake, pour into a greased 8×8 inch pan, and bake at 350 degrees for 50 minutes. If you want a shorter cake, pour into an 11×7 inch greased glass pan and bake at 325 degrees for 45 minutes. Cool before slicing. Forms a slightly crusty top, so no need for frosting. Delicious with whipped cream or vanilla ice cream. Easy as can be!
