2014 Iowa State Fair “Iowa Sweet Corn Rules!” Second Place Winner

Ingredients:
2 pkgs. Iowa Choice Harvest Frozen Sweet Corn
1 c. Mayonnaise
1 Green Pepper (seeded and chopped)
1 Small Red Onion (chopped)
2 c. Colby Jack Cheese (shredded)
2 bag (9 ¾ oz) Fritos-Chili Cheese (crushed)
Directions:
Mix together the frozen corn with the green pepper and red onion. Then add cheese and mayonnaise. Refrigerate until ready to serve. Right before serving, crush Fritos and sprinkle on salad, then serve. 4 Servings
